Meet the Staff
The staff of Residential Dining is committed to providing you a wonderful dining experience each time you visit one of our Market Places. Below are the folks who oversee the operational quality of our facilities. Please feel free to contact any of them if you have questions.
Greg Black
Director of Residential Dining
Greg Black has been employed with the University of Iowa since 1981, first as Manager of Iowa Memorial Union Food Service, then as Director of Residential Dining/Assistant Director of University Housing since 1999. A graduate of Michigan State University, his extensive career in collegiate food service has included positions at Michigan State, Illinois State and the University of Michigan. In 1993 he was the recipient of the Ivy Award of Distinction from Restaurants & Institutions Magazine and the Board of Regents, State of Iowa Award for Staff Excellence in 1999.
To stay on the cutting edge of the food service industry, Greg is the member of several professional organizations, including the National Association of College and University Food Services (NACUFS), the Society for the Advancement of Food Service Research, and the National Restaurant Association. During his tenure at UI Residential Dining, the cafeteria-style facilities were updated to the present "state of the art" market places at Burge and Hillcrest today.
Greg and his wife Barbara, have two grown children. In his spare time, Greg enjoys cooking, menu and cook book collecting, travel, reading and racquetball.
Anne Harkins
Manager, Burge Market Place
Anne is a graduate of Eastern Illinois University and has worked in campus dining for 25 years. She has been employed at the University of Iowa since October 2003. Prior to coming to Iowa, she was employed at Eastern Illinois University, North Park College, National Louis University, Parkland College, and University of Chicago. She says that her favorite part of being Burge Market Place Manager is working with students on special events or those with special dietary needs.
Anne is a resident Solon where she and her husband are raising their 11 year-old daughter.
Fred Kurt
Manager, Hillcrest Market Place
Fred has worked at the University of Iowa since July 2004 as Manager of the Hillcrest Market Place & Athletic Training Table. Before coming to the University of Iowa, he was a General Manager with American Hospitality Concepts Incorporated (Ground Round Restaurants) for thirteen years. Fred attended Iowa State University for Hotel & Restaurant Management and grew up in the small Eastern Iowa town of Bellevue.
Fred is a resident of North Liberty with his wife, Julie and two children, Mitchell (13) and Erin (10). He keeps busy with his children's many activities and coaches many of their youth sports. In his spare time, he enjoys playing basketball, snow skiing, water skiing, boating & motorcycling.
Barry Greenberg
Executive Chef
Barry Greenberg, Executive Chef for Residence Dining is new to the department but has been on campus since November of 1992. He has worked for IMU Food Service as a Production Chef, Restaurant Chef, Executive Chef and Food Service Director. He began his culinary career by attending and graduating from Johnson and Wales University in Providence, Rhode Island. Originally from New England, Barry has lived and worked in many great kitchens throughout the United States including Stowe and Killington Vermont; Martha’s Vineyard, Massachusetts; Vail, Colorado; and San Diego, California.
Barry received his Executive Chef’s Certification (CEC) from the American Culinary Federation in 2003, and has been actively involved with various Culinary and Recipe Competitions which include winning the ACF Gold Medal at the Upper Midwest Restaurant Show and the top honors in the Cattlemen’s ‘Best of the Barbecue’ recipe competition. Barry most recently won the NACUFS National Culinary Challenge in July of 2007.
Barry and his wife Lisa have two children, Emma and Calvin and they live here in Iowa City. They prefer to spend any valuable free time at home whenever possible.
Randy Fabor
Assistant Manager, Burge Market Place
According to Randy, dining at the Market Place should be an educational experience, a chance to broaden your horizons and try new things. He should know - he's been working at the University of Iowa for a "long time," first as a student employee, then as an Assistant Manager at Quadrangle and Hillcrest Food Services before moving to Burge Market Place. Randy has a B.S. from the University of Iowa in General Science and a B.S. from Mt. Mercy College in Elementary Education. In fact, he spends some of his days off from the Market Place substitute teaching in Cedar Rapids.
Randy's wife, Cynthia, is an Associate Professor of Microbiology at Kirkwood Community College and they are the parents of two grown children (Adam and Allison). He enjoys soccer, teaching, genealogy and chocolate (chocoholic!).
Julie Hamel
Assistant Manager, Burge Market Place
Julie has been a manager in the Marketplace for just over 5 years. She is an alumna of the University of Iowa (class of '95) and has enjoyed her time here as both a student and a staff member. Even though she has worked in the food service industry for over 15 years in various capacities, Julie has found the challenges of college food service to be the most rewarding. She's been involved in a number of committees and says she enjoys being a part of making things happen - especially being a part of the renovation of the residential food service operation from a standard cafeteria line to a Market Place.
Julie is originally from Cedar Rapids and has lived in Iowa most of her life. She is a single mom of two great kids and divides her time between work and spending time with them. When she has spare time, she likes to read or spend time with friends.
April Randall
Assistant Manager/Chef, Burge Market Place
April studied culinary arts at Kirkwood Community College and joined the Market Place staff in September, 2007. She spent the previous 6 years working at Linn Street Cafe. Her passion is thinking outside of the box when it comes to food and working with new ingredients. She doesn't like to make the same dish twice.
April enjoys cooking and entertaining friends and family in her spare time. She also enjoys boating, fishing, and spending lots of time with her husband and 3 year-old son.
Molly Whaley
Assistant Manager, Burge Market Place
Molly has worked at the University for 18 years in all of the residential dining centers. She is a graduate of Iowa State University with a BS degree in Food Service Management. A very active person, she spends her spare time running, working out at the gym, or playing at home with her 8 dogs and 11 cats.
Molly and her partner are currently waiting for their newly adopted son, Hebert, to arrive from Haiti to be part of their family.
Jonathan Dye
Assistant Manager/Chef, Hillcrest Market Place
Jonathan Dye has been with the University of Iowa since May of 2006. He is a graduate of the Culinary Institute of America and has worked in a variety of different culinary operations across the United States from small, fine dining restaurants to large scale hotel catering, most recently the Hyatt Regency in Kansas City.
Jonathan says "I love chefs but have no tolerance for TV food personalities posing as chefs; I am talking to you Rachael Ray!! I enjoy long walks on the beach at sunset, holding hands, and competing in Mixed Martial Arts Parcheesi."
Teresa Kaplan
Assistant Manager, Hillcrest Market Place
Teresa began her career at The University of Iowa October of 1977, shortly after she graduated from a dietetic internship at the University of Iowa Hospitals and Clinics. She attended Iowa State University where she met her husband while working in food service.
Teresa's true passions are her cats, rescuing stray cats, and her lovely perennial garden. She also enjoys biking or rollerblading on the nature trail.
Bill Kelly
Assistant Manager, Hillcrest Market Place
Bill has been employed in University Housing since March 2000. He resides in Coralville with his family - wife Karen & 11 year-old daughter Katelyn. He enjoys time with his family, especially riding the bike trails around Iowa City. Bill is also the audio/visual coordinator for the Coralville United Methodist Church.
Rick Woodard
Assistant Manager, Hillcrest Market Place
Rick has been employed at the University of Iowa since 2005. His first two years were spent as Pastry Chef at the IMU before coming to the Hillcrest Market Place in January of 2007.
A lifetime resident of Iowa, Rick, his wife Melinda and daughter Eliza enjoy family time, especially renovating their 1895 Queen Anne Victorian home.
